Classic Roasted Chicken

Cook Time: 1-2 hours

Serves 4-6

Ingredients

  • 1 whole chicken

  • 2 cups of carrots 

  • 2-3 cups of chopped potatoes

  • Salt and pepper to taste

  • ½  onion chopped

  • 1 Tbsp of olive oil

Instructions

  1. Preheat oven to 375 degrees

  2. Place chicken, onion, carrots and potatoes, in a roasting pan or cast iron skillet. Season generously with salt and pepper and olive oil. 

  3. Bake for 1.5 to 2 hours. Or until internal temp reaches 165 degrees. Enjoy!
