Here’s the deal: food in the U.S. is artificially cheap for a lot of economic and policy reasons. We want to provide healthy, organic produce at a price that is accessible. That means we ultimately take a pay cut, rather than exploiting labor or the earth to cut the cost. In our food system, most labor is undervalued from farmers to waitresses to grocery store workers to delivery drivers. We pay our farm staff a living wage. So if you are willing and able to add gratuity, you are investing in your local farmers and investing in building a more resilient food system.
