Fried Green Tomatoes

Ingredients

  • 2 green tomatoes, sliced into ½ inch slices

  • 2 eggs

  • 1 cup flour

  • 1 cup cornmeal

  • 1 tsp paprika, optional 

  • 1 tsp cayenne, optional

  • Canola oil

  • salt & pepper to taste 

Method 

  • In a medium skillet, heat about ¼ inch of canola oil over medium-high heat.

  • In a bowl whisk together eggs and set aside. Mix cornmeal, paprika, cayenne, salt & pepper, and set aside. Put 1 cup of flour in a bowl and set aside. 

  • Dip tomato slices in flour, then dip into egg, then press each side into cornmeal mixture. Repeat with each tomato slice.

  • Working in batches, place as many tomatoes as will comfortably fit in the pan. Fry until golden & crispy, about 3-4 minutes each side.
