Green Bean & Mexican Mint Marigold Delight

Ingredients

  • Green beans, 1 bag or about 3/4lb

  • Mexican mint marigold Herb or sub Tarragon, 1 bunch 

  • 3-4 scallions or 1 shallot or 1 small onion

Method

  • Trim off stem ends of green beans and place in a pot of hot water, the water should only cover the beans half way. Add a dash of salt to the water and bring the water to a slight boil. Boil for no more than 5 minutes. Essentially, you are lightly steaming the beans, they should still have crunch to them. Drain water and set aside. 

  • In a saucepan, add a drizzle of oil and brown your onions or shallot until golden brown and translucent. 

  • Chop Mexican Mint Marigold until fine, I like to use a scissors for this. 

  • Add marigold and steamed green beans to onions in saucepan and stir to mix together. 

  • Sauté until the green beans are lightly browned, it should take about 5 minutes. 

  • Enjoy this delightful mix of flavors!
