Pickled Radishes with Crema

Ingredients

  • Radishes, Cherry Belle – 1 bunch

  • 2-3 fresh limes or equivalent lime juice

  • Lime Zest

  • Sour Cream or Crema – 1 cup

  • Pinch of Salt


Method

  • Trim off greens and thinly slice radishes.

  • Place radish slices in small bowl and cover with lime juice. Radishes should be completely submerged in juice. Leave to soak for 5-10 mins

  • Meanwhile, Mix 1 cup sour cream with 2 Tbs of lime juice and the zest of 2 limes. Add salt to taste and mix together. 

  • Once radishes are soaked, dip radishes in sauce and enjoy! This is also a great taco sauce and topping! If you prefer your radishes really crunchy, skip step 2.
