Mint Pea Sauté
2-3 servings -10 mins prep
Ingredients:
- 1 cup peas 
- 1 tbsp olive oil 
- 1 shallot, chopped 
- splash of lemon juice (1 tsp) 
- 2 tbsp fresh mint, chopped 
Method:
- Heat a skillet over medium heat, and add enough olive oil to coat the bottom of the pan (about 1 tbsp). 
- Add chopped shallot and peas to the pan, and cook until peas are tender, about 5 minutes. 
- Remove from heat and toss with a splash of lemon juice, and fresh mint.
