Mint Pea Sauté

2-3 servings -10 mins prep

Ingredients: 

  • 1 cup peas 

  • 1 tbsp olive oil

  • 1 shallot, chopped

  • splash of lemon juice (1 tsp)

  • 2 tbsp fresh mint, chopped

Method:

  • Heat a skillet over medium heat, and add enough olive oil to coat the bottom of the pan (about 1 tbsp). 

  • Add chopped shallot and peas to the pan, and cook until peas are tender, about 5 minutes.

  • Remove from heat and toss with a splash of lemon juice, and fresh mint.
