Kale Strawberry Salad

2-3 servings ~ 10 mins prep

Ingredients: 

  • 1 bunch kale

  • 1 cup strawberries, sliced

  • 1 cup summer squash, chopped (optional, or sub your favorite seasonal veggie)

  • ¼ cup sunflower seeds

  • ¼ cup feta or goat cheese

Dressing:

  • 3 tbsp apple cider vinegar

  • 3 tbsp olive oil

  • 2 tsp Dijon mustard 

  • 1 tsp poppy seeds

  • 1 tbsp honey 

  • salt & pepper to taste


Method:

  • In a small bowl mix together apple cider vinegar, mustard, honey, poppy seeds, and salt & pepper. Slowly add olive oil while whisking together. Set aside. 

  • Pull stems off kale leaves and discard. Chop kale if desired. Drizzle a little olive oil over kale and massage for 2-3 minutes, until leaf color has darkened a bit. 

  • Toss kale, strawberries, and summer squash in a large bowl with the dressing. 

  • Top with sunflower seeds and goat cheese. Enjoy!
