Coconut Braised Collards

Serves 2-3 ~ 15 min prep

Ingredients

  • 1 bunch purple collard greens, chopped into 1-inch strips

  • 1 bunch scallions (aka green onions)

  • 1 tbsp butter

  • 1 tbsp coconut oil 

  • 1 ½ cups unsweetened coconut milk 

  • 1 tbsp soy sauce 

Method 

  • In a large skillet, heat butter and oil over medium-high heat. Add chopped scallions and cook until softened, about 1 minute. 

  • Add collards and cook, stirring, until wilted, about 1-2 minutes. 

  • Add coconut milk and soy sauce and bring to a simmer. Simmer uncovered, stirring frequently, until collards are cooked to your taste, about 10 minutes. Enjoy over rice, and add chicken or tofu if you wish!
