Quick Rhubarb Compote

2-3 servings - 5 mins to prepare

Ingredients: 

  • 3 cups Rhubarb

  • ½ cup sugar

  • 1 tbsp water

  • pinch of cinnamon

  • zest of lemon (2 tsps) 

Method:

  • In a saucepan, combine the rhubarb, sugar, water and cinnamon and lemon zest.

  • Simmer over low-medium heat for about 15 minutes, or until all the sugar has dissolved and the rhubarb has broken down.

  • Let cool.

  • Eat with ice cream, yogurt, pancakes, or anything you can dream up! You can store it in the fridge for over a week or freeze to be enjoyed later!
